Add the green chillis, coriander, spring onions, lime leaves, sugar and minced garlic to a heatproof bowl.
Heat up the oil until just before smoking and pour over the garlic mix (this should sizzle).
Add the fish sauce, lime juice and crushed peanuts (if using) and stir to combine.
Adjust for seasoning - use immediately as a dipping sauce or serve over noodles or rice dishes 😘
