Don't use your sourdough starter when it's at its peak.
Your starter is a living thing and it gets full like everyone else.
When your starter is at its peak, it is full and doesn't want to eat anymore.
If you fed it again, you would get less of a rise.
Wait until your starter has finished its last feeding, then it will be ready to eat again and that is when you make bread.
This will give you a better rise and also a stronger flavor in your bread.
You can use discard straight from your fridge to make bread, but it will be highly acidic and the flavor will be off, and your results might be inconsistent.
Feed your starter the day before you want to make bread, and then the next day you can use it anytime.
