Peanut Butter Yogurt Fudge Cookies
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. In a large bowl, whisk together the peanut butter, Greek yogurt, honey (or maple syrup), and vanilla until smooth.

  3. Stir in the oat flour, cocoa powder, baking powder, and sea salt until a thick cookie dough forms.

  4. Fold in the dark chocolate chips.

  5. Scoop the dough into 8 equal cookies on the prepared baking sheet and gently flatten each one with the back of a spoon, as they won’t spread much while baking.

  6. Bake for 10–12 minutes, until the edges are set but the centers are still soft.

  7. Let the cookies cool on the baking sheet for 10 minutes before transferring them to a wire rack.
