Preheat to 375°F (190°C) and grease a 9×13-inch baking dish.
Season both sides of chicken breasts with salt and pepper.
In a bowl, whisk together honey, balsamic vinegar, and thyme.
Place chicken in the baking dish, pour glaze over, and scatter cranberries.
Cover with foil and bake for 20 minutes.
Remove foil and bake another 15–20 minutes until cooked through.
Sprinkle feta on top, return to oven for 5 minutes.
Broil for 2–3 minutes for golden top.
Rest for a few minutes, then garnish with parsley.
