Sausage, Potato, Kale Soup aka Zuppa Toscana
  1. In dutch oven, cook sausage. Add onion and garlic and cook until sausage is browned and onion is translucent. No need to drain the fat. So fatty. Add black pepper.

  2. Add chicken broth and potatoes. Probably you’ll need to add somewhere between 2-4 cups of water so that everything is covered. Cook for 1 hour, or until potatoes start to fall apart. Taste and add more seasonings (and salt) if needed.

  3. Add washed and chopped kale to the mix. It will look like a lot initially, but cooks down well. Let it cook until bright green and softer (3-5 minutes). Add heavy cream. Stir well. Turn off heat, but leave on hot stove.
