Preheat the oven to 400F
In a large mixing bowl, mix ground beef, diced onion, egg, panko soaked with water, minced garlic, Parmesan, kosher salt, black pepper, and Italian seasoning
Line a baking tray with parchment paper or cooking spray, mold meatballs and arrange on the tray (makes 8 large meatballs)
Bake for 20 minutes, flipping the meatballs halfway through
While meatballs cook, add 24 oz of jarred vodka sauce to a pan and bring to a simmer
When meatballs are done, add them to the pan and let them cook through until internal temperature reaches 160F
Toast sub rolls with cheese
Place meatballs, extra sauce, and extra cheese inside the toasted subs and serve
