Brown the ground beef or turkey in a large pot or dutch oven.
Drain any excess fat.
Add the taco seasoning and stir to coat the meat. Add 10oz can of Rotel.
Stir in the 2 cups of instant rice and 2 cups of broth.
Bring to a boil, put on lid, take off heat and let sit 5-7 min until rice is cooked through.
Top with melted queso.
