Stir-fried Burdock Root
  1. In a large mixing bowl, add 7-8 cups of water and squeeze in lime or lemon juice, or use vinegar. This helps prevent browning.

  2. Scrub the burdock roots with a clean scrubbing sponge to remove dirt. Cut the cleaned burdock into 3-inch julienne strips. Soak the burdock in the lime water while you prepare the sauce.

  3. In a small bowl, mix soy sauce, fish sauce, mirin, sugar, honey, black pepper, and minced ginger. Set aside.

  4. Drain and rinse the burdock under cold water.

  5. Heat a large skillet over medium heat, add sesame oil, and swirl to coat the pan. Add the drained burdock and stir-fry for about a minute.

  6. Pour in the sauce mixture and continue cooking for 8-10 minutes until the sauce thickens and fully coats the burdock, stirring occasionally.

  7. Once the sauce has reduced and the burdock is fully coated, sprinkle sesame seeds over the top before serving.
