Preheat the oven to 350'.
Line a casserole dish with parchment paper and add all of the veggies plus the chopped ham.
In a separate bowl, stir together the eggs, whites, cottage cheese, salsa verde, salt and garlic.
Pour the mixture over the veggies, making sure everything is distributed well.
Top with parmesan.
Bake for 45 minutes or until set.
