Dice the potatoes into 1-inch cubes.
Add potatoes to a large pot, and submerge them in water.
Bring potatoes to a boil over medium-high heat. Reduce the heat, and simmer on low for 15 minutes or until potatoes are fork tender.
Drain potatoes, and set aside to cool.
Whisk the ingredients for the dressing together in a small bowl.
Combine the remaining ingredients. Pour the dressing on top, and toss to coat.
Top with feta and serve warm.
