Freezer-friendly Breakfast Sandwiches
  1. Preheat oven to 325 degrees F. Spray a 9x13-inch pan with cooking spray.

  2. Beat the eggs, milk, cottage cheese, cooked bacon/meats, salt, and pepper together in a large bowl using a fork, whisk, or hand mixer.

  3. Pour into the prepared pan and bake for 18-22 minutes, (or forget about it like me and take it out in a panic). Cool before cutting into 12 circles or squares.

  4. Top 12 of the english muffin halves with the eggs and cheese then top with the other muffin halves to make 12 sandwiches.

  5. Individually wrap each sandwich with waxed paper, aluminum foil, or parchment paper and freeze, sealed in a large ziploc bag, for up to 1 month.
