Line a large baking sheet with foil or parchment paper, grease lightly with cooking spray and pre-heat oven to 400 degrees
Trim & peel carrots, then dice into bite sized pieces and place in a large bowl
Add olive oil, garlic powder, onion powder, smoked paprika, salt and pepper to the carrots and toss until evenly combined
Place carrots onto the baking sheet and bake for 28-30 minutes until fork tender and golden
While the carrots are roasting, prepare your feta dip. In a food processor or high speed blender, add feta, Greek yogurt, olive oil, lemon zest, lemon juice, honey, salt & pepper and blend until smooth
Spread the feta dip onto the bottom of a shallow bowl/plate, then add roasted carrots on top along with an extra drizzle of honey and fresh thyme & ENJOY!
