Mix together 1 cup Greek yogurt, ½ scoop vanilla protein powder, a small splash of vanilla extract, and 2-3 tbsp milk of your choice. Add the milk slowly so it's not too thick or too watery. If its too thick, add a tiny more until you reach the consistency you see in my video.
Place a toothpick through each of the blueberries. Then dip each blueberry to coat the bottom, place on a parchment-lined tray, and freeze for 2 to 3 hours.
After this time, remove the blueberries from the freezer so you can dip them in melted chocolate. I used 85 percent dark chocolate to keep it lower sugar, but use whatever chocolate you like. Just set a heat-safe bowl over simmering water and stir until smooth.
Dip the frozen blueberries in chocolate, place back on the tray, and freeze for another 5 to 10 minutes. You want the chocolate to set, but not freeze them. This is important!
Remove the toothpicks, toss in a bowl, and enjoy.
