Butterfly the chicken breast.
Mix the marinade ingredients and add the chicken.
Marinate 30 min if possible and longer if you like.
Add olive oil to a pan and cook about 2-3 minutes each side or 3-4 minutes each side if the chicken is thick.
Add 2.5 cups water and 1 tablespoon butter.
Add in vigo saffron rice and cook about 12-15 minutes on low heat.
Serve over rice!
