Season chicken breast with Italian seasoning, garlic powder, Old Bay, paprika, olive oil, salt and pepper
Bake seasoned chicken in the oven at 180°C for 25-35 minutes, then slice into small chunks
Sauté onions, garlic, carrots and celery, then cook down with tomato paste
Add sun-dried tomatoes and chicken stock to the pot
Add gnocchi, heavy cream, and roasted chicken chunks to the soup
Let the gnocchi cook for 2-5 minutes before adding Parmesan and cheddar cheese
Add chopped spinach and season to taste
Serve and garnish with parsley and heavy cream
