Spicy Cauliflower Mushroom Soup
  1. Heat oil in a large pot on medium high heat. Add onions and saute until translucent, about 5 minutes.

  2. Add cauliflower and cook for a few minutes.

  3. Add mushrooms and saute additional 7-8 minutes.

  4. Add chicken broth, salt, pepper, and smoked paprika.

  5. Bring to a boil and cook an extra few minutes.

  6. Turn off heat and blend in pot with a hand (immersion) blender until desired consistency is achieved. I like it with a little texture. You may also transfer soup to a blender or food processor and pulse until preferred consistency is achieved. Be careful!
