Cook Lemon Curd

  1. Whisk egg yolks, sugar, lemon zest, lemon juice, and salt until blended.

  2. Cook over simmering water, whisking constantly, until thickened to hollandaise consistency, about 10 minutes or 170°F (77°C).

  3. Remove from heat. Whisk in butter pieces until melted.

  4. Pour into a jar or bowl.

  5. Place plastic wrap directly on the surface.

  6. Refrigerate up to 10 days.
