Cranberry & Spinach Stuffed Chicken Breasts With Brie
  1. Preheat your oven to 375°F (190°C).

  2. Lightly grease a baking dish or line it with parchment paper.

  3. Using a sharp knife, carefully cut a pocket into the side of each chicken breast without slicing all the way through.

  4. 2️⃣ Make the Filling:

  5. In a small bowl, combine chopped spinach, dried cranberries, and brie slices.

  6. Stuff each chicken breast with the mixture. Secure the opening with toothpicks if necessary.

  7. 3️⃣ Season the Chicken:

  8. Rub each chicken breast with olive oil.

  9. Season with garlic powder, dried thyme, salt, and black pepper.

  10. 4️⃣ Sear and Bake:

  11. Heat a large oven-safe skillet over medium-high heat.

  12. Sear the chicken for 2-3 minutes per side, until golden brown.
