Homemade Marshmallows
  1. Add ½ cup water and 3 tbsp gelatin powder to a bowl. Let it sit without touching it.

  2. In a small pot, add ½ cup water and ½ cup honey. Let it come together on medium heat for 3-5 minutes, then turn off the heat.

  3. Use a hand mixer to mix the gelatin on low speed. Slowly pour in the honey and water mixture as you mix.

  4. Once fully combined and no more gelatin clumps are visible, add 1 tbsp vanilla and mix on high for about 10 minutes until thickened completely.

  5. Immediately pour the mixture into a parchment-lined tray and refrigerate for a minimum of 4 hours.

  6. When ready to cut, do so on a powdered sugar surface.
