Salted Caramel Banana Bread
  1. Mash the bananas in a bowl.

  2. Add in the melted butter + sugar and combine.

  3. Add in the egg + vanilla.

  4. Fold in the flour, bicarb, salt and cinnamon if using until just combined.

  5. Put the sugar + water in a saucepan and put on a low to medium heat.

  6. Let this simmer away. The mixture will start to go clear.

  7. Gently swirl the pan to help it caramelise evenly.

  8. Once it reaches an amber colour, take off of the heat.

  9. Add the salt and butter to the caramel.

  10. Pour the caramel over the banana halves in a lined tin.

  11. Pour over the banana bread mix.

  12. Bake at 170°c (fan oven) for about 25 to 35 minutes.

  13. Leave to cool down.

  14. Flip it onto a plate and peel the parchment paper off.

  15. Sprinkle some sea salt flakes over the top.
