Lentil And Pasta Stew
  1. Soak the lentils in cold water whilst you prep & begin cooking the veg. This makes lentils cook better, more tenderly, and quicker.

  2. Cook carrots & onions in splash of oil & big pinch of salt for at least 10 mins over moderate heat, stir often, you want it getting sticky & sweet.

  3. Add garlic, herbs & tom puree, cook for 2 - 3 mins more.

  4. Add drained lentils, top up with cold water, about 2cm over the line of all your lentils & veg in pot. Bring to boil, simmer for 15 mins.

  5. Add pasta, continue to cook until pasta is cooked through, the lentils will finish cooking in the time the pasta takes to cook. Add a splash more boiling water if you want it more soupy, less of a stew. Use stock instead of water, if you want, I don't think you will need it if you cook the carrots down enough!

  6. Remove from heat, add vinegar & mustard, check seasoning, more salt/pepper?

  7. Serve with grated cheese, splash of olive oil & some chilli flakes.
