Jamaican Ginger Tea
  1. Using a saucepan, bring the water to a boil on high heat.

  2. While you wait for the water to boil, peel and grate or thinly slice the ginger, then cut the lime.

  3. Once the water is boiling, add the ginger and lime to the pot and let cook for 3-5 minutes; then remove from the heat, cover and let it stand for at least 5 minutes longer for a stronger flavored tea.

  4. Using a strainer, strain and serve the tea hot or chilled with ice and sweeten with honey or sugar and enjoy.
