Jim's Steak Salad
  1. Pat steak dry and season with salt & pepper.

  2. Heat a pan or grill over medium-high heat with a drizzle of olive oil.

  3. Cook for about 3-4 minutes per side (medium-rare) or longer for desired doneness.

  4. Let rest for 5-10 minutes, then slice thinly against the grain.

  5. Whisk together blackberry vinegar, olive oil, Dijon, honey, salt, and pepper until emulsified.

  6. If using, stir in mashed fresh blackberries for a deeper berry flavor.

  7. Toss arugula and mixed greens in a bowl.

  8. Add red onion, apples, dried cranberries, candied pecans, and roasted baby carrots.

  9. Drizzle with half of the blackberry vinaigrette and toss gently.

  10. Arrange sliced steak on top.

  11. Sprinkle with goat cheese and drizzle remaining dressing.
