Add oil to soup pot and heat over med-high. Add peppers, onion, and garlic. Saute 5 minutes.
Add cumin, coriander, chili, oregano, salt, and saute a little bit longer to get the spices going.
Add chicken stock, lime juice, and simmer.
Drain the white beans. Mash up the beans from one can.
When it boils, add beans and return to a simmer for 20 minutes.
Taste and adjust. Add chicken. Leave on medium heat for 5 minutes or as long as you can stand.
Serve with more limes, avocado, cheese if ur that kind of person, chips, crema, scallions.
