Lemon Cheesecake Cookies
  1. In a large mixing bowl, add 250g of softened butter, ⅔ cup of icing sugar, and 1 teaspoon of vanilla extract. Beat them together with an electric mixer until light and fluffy.

  2. Sift in 2 cups of plain flour and ⅓ cup of custard powder, then mix everything together with a wooden spoon until a nice dough forms.

  3. Take tablespoon-sized balls of the dough and roll them in your hands, then place them on a baking tray lined with non-stick baking paper. Flatten each one slightly with a lightly floured fork.

  4. Bake the cookies in a preheated oven at 160°C for 15-20 minutes, or until they're nice and golden.

  5. In a mixing bowl, combine 100g of softened cream cheese, 1 cup of icing sugar, and 2 tablespoons of lemon juice. Beat them together with an electric mixer until smooth.

  6. Take one cookie and spread some of the cream cheese mixture onto it, then place another cookie on top and gently press them together until the filling comes out the sides.
