Broccoli Cheese Soup
  1. Melt your butter in a large pot over medium high heat.

  2. Add in your onions and season with salt and pepper.

  3. When your onions are soft, add in the garlic and cook for about 2 minutes.

  4. Stir in the xanthan gum and cook until absorbed.

  5. Pour in the chicken broth and half n half and bring to a boil.

  6. Add in the broccoli and let cook for about 10 minutes or until the broccoli is soft.

  7. Slowly stir in the cheese and make sure it's melted before adding in more cheese.

  8. Season with nutmeg and let simmer on low for 5 minutes. Enjoy!
