Grease a 9" x 13" pan
Break 12 eggs into pan and poke each yolk or lightly scramble
Pour 1 cup cream over eggs and add half of shredded cheese
Brown 1 lb sausage in a skillet and drain
Add chopped onion and green pepper to sausage and cook with 2 tbsp butter or margarine for a few minutes
Add optional mushrooms if desired
Place sausage mixture over eggs evenly
Cover with remaining cheese
Bake at 350°F for 45-60 minutes until set and golden brown
Serve hot
