Preheat oven to 200°F (100°C).
To make the salsa, combine all ingredients in a medium bowl. Season to taste with salt and pepper.
To make the tacos, wrap tortillas in aluminum foil and place in the oven for about 6 minutes to warm.
Heat 1 Tbsp (15 mL) butter in a large skillet over medium heat. Cook eggs, four at a time to your preferred doneness.
Place one egg on top of one warm tortilla. Top with salsa, crumbled Feta, cilantro, and a drizzle of your favourite hot sauce.
Repeat with remaining tortillas.
