Preheat oven to 400F. Line a baking sheet with parchment paper.
In a large skillet, add the olive oil to warm up for 1 minute over medium high heat. Sauté the garlic, red onion, and ginger until fragrant, about 1-2 minutes.
Add the ground turkey and cook thoroughly. Add in the grated carrots, sliced mushrooms, and soy sauce. Stir until the mushrooms are tender.
Remove from heat and allow to cool. Fold in the fresh parsley.
Soak each rice paper roll in cold water until soft, then place on a nonstick surface. Add filling into the center and roll up like a burrito.
Brush the rice paper rolls with olive oil, sprinkle with sesame seeds, and bake for 35-45 minutes until crispy and golden brown.
For the Ginger Sauce: In a small saucepan, sauté the olive oil, ginger, and garlic. Add remaining ingredients and cook until thickened. Serve warm with the crispy rice paper rolls.
