Salmon En Croute
  1. Cook onion in butter/oil til soft. Add garlic until fragrant. Add spinach until cooked down. Add cream cheese, stir until full combined. Then add capers, dill, and lemon zest. Stir well.

  2. S/P salmon. Place on center of a puff pastry brushed down with egg. Top with filling, then cover with another sheet of puff pastry, folding down to cover the whole thing.

  3. Trim edges of puff pastry leaving about 1 inch of plain pastry around the edge. Seal edges using tines of fork.

  4. Cook at 375f until internal temperature reaches 130f

  5. Rest for 5 minutes before slicing.
