Combine water, sugar, and yeast. Let it bloom. Add flour, melted butter and salt.
Knead the dough for about 5 minutes. Place in a oiled bowl and let it rise for 45- 60 minutes.
Preheat oven to 425 degrees F and get the water to boil, add baking soda (I used the big sauce pan) .
Deflate dough, roll into 1 inch logs and cut into 1 inch peices. Let them puff a bit. Boil these peices for 20-30 seconds. (if doing the cheesy bites stop here-put the pieces in a greased dish, I had to use two. cover in egg wash, pour over 6 tbsp butter, and top with cheese (I did quesadilla, harvarti, and parmesan) bake for 30 minutes until all of it is deeply golden YUM!!)
Place on a baking sheet covered in parchment, egg wash, sprinkle salt. Bake for 12-14 minutes or until golden.
Brush with butter and eat
