Homemade Strawberry Candy
  1. Prepare the Strawberry Base: Wash and hull the strawberries. Blend them until smooth. Optionally, strain the puree through a sieve to remove seeds for a smoother candy.

  2. Make the Candy Mixture: In a medium saucepan, combine the strawberry puree, sugar, corn syrup, and lemon juice. Heat the mixture over medium heat, stirring frequently. Add the gelatin and mix until fully dissolved. Attach the candy thermometer to the side of the saucepan. Heat until the mixture reaches 240°F (for soft/chewy) or 300°F (for hard candy).

  3. Pour and Set: Grease your molds or line a tray with parchment paper. Carefully pour the hot mixture into the molds or tray. Allow the candy to cool and set for 2–3 hours. After the candy has set, take it out of the molds and place it in an airtight container for storage.
