  1. parboil potatoes until tender (about 10 minutes). alternately cover and microwave for about 6 minutes. rinse with water and allow to dry.

  2. toss with oil, salt, and optionally pepper herbs and other spices. rough up the outside of the potatoes while tossing

  3. grill on high heat over direct fire until crispy. about 8 minutes. turning occasionally.
