Dice your shallots and green onion into small pieces.
In a pan coated with spray oil on medium heat, add your minced garlic, shallots, and bean sprouts and sauté.
On the side of the pan, cook your shrimp.
On the side of your pan, scramble your eggs and mix everything in the pan together.
Stack your rice paper, fold them, and snap them until you have a bunch of 1-inch wide, long sheets.
Fully wet your rice paper in water until it becomes like noodles and place them in your pan along with lime juice, oyster sauce, dried chili flakes, and crushed peanuts.
In a bowl, mix together brown sugar, water, and fish sauce to make your sauce.
Pour your sauce over the pan, mix, top with green onions and extra lime juice, and enjoy.
