Preheat your oven to 375°F (190°C).
In a large bowl, combine the lean ground beef, finely chopped red onion, panko bread crumbs, chopped dill, chopped mint, lemon zest, tahina, chopped kalamata olives, and salt.
Mix well until all ingredients are evenly incorporated.
Add 1-2 tablespoons of flour to the mixture to help bind it together.
Form the mixture into meatballs of your desired size.
Place the meatballs on a baking sheet lined with parchment paper or lightly greased.
Bake in the preheated oven for 20-25 minutes, or until the meatballs are cooked through and golden brown on the outside.
Remove from the oven and let the meatballs cool slightly before serving.
