Stuffed Baked Chicken
  1. Preheat your oven to 400.

  2. Slice each chicken breast in half, lengthwise, and pound them out thinly between two sheets of plastic wrap. Toss the wrap, and season the chicken with salt and pepper. Place 2 Tbs. each of the sauerkraut and cheese in the center of each chicken breast, followed by a layer of spinach. Roll up and secure with toothpicks. Place chicken in a shallow roasting pan and brush with melted butter, and a sprinkle of smoked paprika. If you have regular paprika or even sweet, that’s totally fine. Cover with aluminum foil and bake for about 30 minutes.

  3. While it’s baking, mix together the honey and bbq sauce in a small bowl.

  4. Remove the foil after 30 minutes and brush the chicken with the glaze. Bake, uncovered for 10 more minutes. Garnish with fresh parsley and serve with any sides you dig!

  5. Serves 4.
