Heat the olive oil in a large frying pan.
Cut off the top of the tomatoes and place them with the cut surface facing down in the pan. Add the chopped onion and the whole garlic cloves in the middle of the pan.
Put on a lid and let everything cook on medium heat for about 15 minutes or until the tomatoes have softened.
Remove the tomato peels and discard them. Mash the tomatoes directly in the pan.
Stir in the tomato puree and mix thoroughly. Season with salt, black pepper and paprika powder.
Add the spinach and stir until softened.
Pour in the cream and let the sauce simmer for a few minutes.
Meanwhile, cook the pasta according to the instructions on the package.
Add the cooked pasta to the sauce and mix thoroughly.
Stir in the parmesan and mix until everything is creamy and evenly distributed.
Top with fresh parsley and serve immediately.
