Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a bowl, combine the cottage cheese, grated Parmesan cheese, garlic powder, onion powder, dried herbs, salt, and pepper. Mix until well combined.
Using a spoon or a small ice cream scoop, drop small mounds of the mixture onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each mound slightly with the back of the spoon.
Bake in the preheated oven for about 15-20 minutes, or until the edges are golden and crispy.
Remove from the oven and let the chips cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
