Cook Sweet Potatoes

  1. Microwave diced sweet potato with salt until barely tender, 4-6 minutes, stirring halfway.

Cook Steak

  1. Heat skillet over high heat with 2 tbsp olive oil.

  2. Cook steak, turning every 2 minutes, until browned and medium, about 10 minutes.

  3. Remove steak and set aside.

Cook Vegetables

  1. Add 1 tbsp olive oil to skillet.

  2. Add sweet potatoes and cook until browned, 3-4 minutes.

  3. Add garlic to center and sauté until fragrant, 1 minute.

  4. Add bell peppers and green onions. Cook until bite tender, 3-4 minutes.

Combine and Finish

  1. Return steak and juices to skillet. Add coconut aminos.

  2. Toss and cook 1-2 minutes until liquid evaporates.

  3. Add pepper and cilantro. Remove from heat.
