Sauté onions (add salt to encourage sweating); add mushrooms, and continue until onions are soft and browned.
Add garlic, Italian Seasoning, and sun-dried tomatoes and sauté a couple more mins.
Turn heat down and add beans and cream, salt, & pepper. Warm to simmer.
Add handfuls of spinach and stir until wilted.
Add milk for more liquid if needed.
Serve with warm toasted baguettes.
