Add the carrots, cabbage, onion, garlic and ginger to the mince
Add the egg and cornflour and mix well
Add the sesame oil and soya sauce and mix
Test a small batch by microwaving to test for seasoning and adjust if necessary
Set aside for 30 minutes if possible
Make the dipping sauce by adding all sauce ingredients together and mixing well, then set aside
Line a tray or counter with baking paper or cling wrap
Roll a heaped tablespoon of mince into a meatball and place onto the cling wrap
Lightly brush 1 wonton wrapper with water and cover the meatball
Heat a large frying pan over medium heat and add oil
Place the blanket dumplings into the pan and fry for 1-2 minutes
Add ⅔ cup of water to the pan, place lid on top and simmer for 5 minutes
Remove the lid, check the water, top up with another ¼ - ½ cup, lid back on for 3-4 minutes
Remove the lid and simmer uncovered until the water has evaporated and dumplings are frying
Drizzle with chilli crunch and decorate with sliced spring onions
Serve with the dipping sauce
