Lentil Nuggets
  1. Drain the soaked lentils

  2. Add the lentils and eggs to a blender or food processor and blend until partially pureed, but not entirely smooth

  3. Add breadcrumbs to absorb some of the liquid

  4. Heat oil in a pan

  5. Drop spoonfuls of the lentil mixture into the hot oil and flatten them out

  6. Flip the lentil nuggets after a few minutes, cooking until they are crispy and browned

  7. Drain the cooked lentil nuggets on a paper towel
