Whisk flour, cinnamon, soda, powder, cinnamon, salt, and nutmeg, until combined, in a large bowl.
Whisk oil, brown sugar, granulated sugar, eggs, yolk and vanilla, until smooth, in a medium bowl. Stir in the shredded zucchini. Gently stir the egg mixture into the flour mixture, until just combined. Gently fold in the chocolate chips.
Scoop the batter directly into the wells of your Souper Cubes 1-cup Trays, about halfway up the sides of the wells. For this recipe you will need two, 1-cup Souper Cubes trays, which will give you 8 portions. Sprinkle pearl sugar or turbinado sugar for garnish, if desired.
If you want to bake directly in trays - Preheat the oven 350F. Place trays in the preheated oven, until golden brown and a toothpick can be cleanly inserted in the bread, about 40 minutes.
Remove from the oven and let sit on a cooling rack for about 15 minutes. Gently release the bread from the sides of the tray and once fully cool, gently push out each loaf after about 1 hour. Alternatively, you can freeze your loaves in the trays for easier removal.
Place the trays with labeled lids in the freezer overnight to fully freeze. Allow the trays to stand on the counter for 5 minutes before removing the lid and pop out the frozen cubes. This will allow the cubes to pop out much easier for you. Optional: Pop-out the cubes and transfer them to freezer-safe bags. Label and return back to the freezer.
If you want to freeze batter and bake later - Place the unbaked trays with labeled lids in the freezer overnight to fully freeze.
Preheat the oven 325°F.
Remove frozen trays from the freezer. Bake the whole tray from frozen, in the preheated oven, until golden brown, about 55 minutes. Alternatively, if you only want to bake 1 or 2 loaves, transfer frozen cubes to Souper Cubes Rectangle 5-inch Baking Dishes, bake in the preheated oven, from frozen, until golden brown and a toothpick can be cleanly inserted in the bread, about 55 minutes.
Optional: Pop-out the remaining cubes not being baked and transfer them to freezer-safe bags. Label and return back to the freezer for later baking.
