Caramelise the onion (set aside)
Heat olive oil + butter in a pan over medium heat.
Add onions with a pinch of salt. Cook slowly, stirring occasionally, until deep golden brown and sweet (10–12 min).
Set caramelised onions aside.
Sauté aromatics and shrimp
In the same pan, add garlic, ginger, miso paste, soy sauce, and honey. Cook 1–2 min until fragrant.
Add shrimp and sauté until just cooked (2–3 min).
Add cream and parmesan
Reduce heat to low. Pour in heavy cream and grated parmesan cheese. Stir until smooth and creamy.
Add caramelised onions and noodles
Fold in the caramelised onions, then the cooked Shin Ramyun noodles. Toss gently until everything is evenly coated with the creamy miso sauce.
Finish and serve
Plate the noodles.
Garnish generously with chopped chives and extra parmesan cheese.
Drizzle with chili oil if desired.
