Sauce:
Prepare the avocado and lime sauce by blending the avocado, greek yogurt, 1 clove garlic, lime juice, 2 tsp honey, and handful of cilantro.
Sauté the onion and 2 cloves garlic.
Add the black beans, taco seasoning, and ½ cup veggie broth.
Add the bell pepper and corn.
Spoon the bean mixture into corn tortillas and top with sharp cheddar.
Bake the tacos until the cheese is melted.
