Butternut & White Bean Mac & Cheese
  1. Pre heat oven to 200 degrees C.

  2. Chop butternut and scatter on an oven tray, season and oil then toss and bake in the oven for 30 mins or until soft.

  3. While you wait cook pasta according to pack instructions. Retain 2 cups of the pasta water before draining. Mix some butter or oil through it once drained to stop from sticking.

  4. Once butternut is soft, add to a blender with the beans and olive oil and blitz until smooth.

  5. Pour the pasta into an oven dish and then spoon out the butternut mixture into the pot. Add the pasta water, tomato paste and grate in as much Parmesan as you like. Season and mix together.

  6. Pour the mixture over the cooked pasta and mix well.

  7. Tip the panko crumbs into a bowl and pour over the melted butter. Mix together.

  8. Sprinkle over the cheese and more Parmesan, then the panko crumbs.

  9. Turn the oven to grill setting and grill until golden on top.
