Homemade Granola
  1. Preheat oven to 150C fan. Line two baking trays.

  2. Mix together the oats, seeds, nuts and flaked almonds in a large bowl.

  3. Gently heat the coconut oil, maple syrup, honey, vanilla, spices and salt in a small saucepan. Mix until the coconut oil has melted.

  4. Pour over the oat mixture and mix well to coat. Spread in a thin layer over the 2 lined oven trays.

  5. Cook for 15 minutes, remove from oven and add the coconut and dried fruit. Mix well and return to the oven for a further 8–10 minutes or until the coconut has browned.

  6. Remove from oven and leave to cool.

  7. Store in an airtight container. Serve with fresh fruit and yoghurt.
