In a saucepan, steam the carrot, beetroot, and garlic until soft. Set aside.
Put the diced chicken, carrot, beetroot, and garlic in a food processor.
Add salt and smoked paprika (or sweet paprika) and process until you get a dough-like texture.
Take a portion of the mixture and roll it in a piece of plastic wrap, pressing firmly to shape it into a long, compact sausage.
Repeat the rolling process with all the mixture.
Place the wrapped sausages in the freezer until firm.
Heat a pan with a little butter, olive oil, or lard and brown the sausages well on all sides.
Once browned, cook the sausages in the sauce of your choice for about 10 minutes.
Serve hot.
