Sweet Chili Pineapple Salmon
  1. Preheat the oven to 400 degrees F.

  2. Line a baking sheet with foil and lightly grease it with cooking spray or olive oil.

  3. In a small bowl mix the Sauce ingredients.

  4. Arrange the pineapple slices or rounds on in a single layer on the prepared baking sheet.

  5. Place the salmon on top and brush with the sauce mixture.

  6. Bake for about 15 minutes or until just cooked

  7. Squeeze some lime juice on top, and garnish with chopped peanuts, cilantro, and green onions.

  8. Serve with lime slices.
