Guacamole The Mexican Way
  1. Choose the right avocados - not too green or too brown.

  2. Slice the avocados in half, remove the pit, and dice the flesh.

  3. Dice the onion, serrano pepper, and tomato.

    (Soak the onion in lime juice and salt for 5 minutes )

  4. Chop the cilantro.

  5. In a molcajete or bowl or blender, mash the onion, serrano, and cilantro together to release the flavors.

  6. Add the diced avocado and gently mash, leaving some chunks.

  7. Squeeze in lime juice and season with salt to taste.

  8. Garnish with extra cilantro and serve with tortilla chips.
